Sweet potatoes are one of the healthiest types of carbohydrates for your body. Not only are the an excellent source of vitamin A (in the form of beta-carotene), they are also a great source of vitamin C, manganese, copper, and vitamin B6. Sweet potatoes are about as nutritionally comprehensive as they come. According to nutritionists at the Center for Science in the Public Interest (CSPI), sweet potatoes rank number one on its list of most nutritional vegetables. So, with that said, dig into this delicious, easy, and spicy side dish.
6 Medium Sized Organic Sweet Potatoes
4 tbsp. Organic Coconut Oil
2 tsp. Cayenne Pepper
Salt and/or Pepper to Taste
1) Preheat the oven to 425
2) While the oven is heating up, peel the sweet potatoes and puncture each potato about three or four times with the fork. This allows for the heat of the oven to more easily cook the potatoes
3) Place the potatoes in a pyrex dish or oven sheet and cook for 45 minutes or until soft.
4) Next, place the potatoes in a preheated pot with coconut and mash them until the desired consistency is achieved
5) Stir well, then sprinkle in salt, pepper, and cayenne pepper to taste. Serve immediately.
