Mediterranean Kale Salad


Kale is a beautiful vegetable because of its incredible versatility. Raw or cooked, the possibilities and combinations are endless. Kale also pairs very well with complex carbohydrate rich foods like quinoa, farro, brown rice, and sweet potatoes. Try this unique spin on a traditional Greek Salad!


10 cups chopped kale

3 tbsp lemon juice

2 tbsp sliced onions

2 tbsp fresh chopped black olives

1 tbsp minced garlic

1 1/2 tbsp olive oil

1 medium chopped tomato

1 tbsp feta cheese

1/2 tsp salt

1/2 tsp black pepper


1) Mix together the olive oil, lemon juice, garlic, salt, and black pepper in a bowl. Then simply toss in with the kale, onions, tomato, olives, and feta. Viola! Your very own healthy spin on a Greek Salad!
